This past two weeks has seen the start of summer vacation in our house, and with Vacation begins a whirlwind of activity correct? CORRECT! Our youngest has just graduated from Grade 8 and is working on completing some high school credits online this summer, so her high school years are less stressful, my 15 year old is graciously moving on to Grade 10 thankful not to be a Niner anymore, and firmly ensconced in a new summer romance, my middle child is finding her wings and pushing all the buttons life has to offer (unfortunately some of those buttons are mine ….breath…moving forward), and my 23 year old daughter has just completed her program in photography at the local college and is advancing in her life plan. Boo is going on to kindergarten with the giggles and wonder that is her. She will move mountains one day because for the simple fact her little life has begun with commitment, consistency and co operation from almost every one involved. She has her wings and we will watch her fly high as we did the children before her. Ah the blessings of being a grandparent…my mom certainly use to sprout it enough, I understand now. (Another lesson learned…listen to your momma!)
Unfortunately as is life, it has not been all positive activity and many a night I have fallen into bed, wondering what could tomorrow possibly bring my way? I HAVE GOT TO STOP asking that question! I hate the answers! Last night I went to bed thinking that sometimes it is impossible to please everyone, and you have to take a stand for yourself. It isn’t always easy, it can involve extreme heart ache…but as I’ve learned this past few years everyone has a breaking point. Accepting that is the key…some things are just unacceptable, others become bearable over time. So as I sit there wide awake, thinking this is an impossible situation…a dear friend posted something on Facebook that immediately drew my attention…based on yet another conversation with my youngest children not three days ago!
Impossible…very difficult to deal with…until now! My friend posted a picture and recipe for nothing else other than Impossible Pie!
Seriously…something so simple, something with such a foreboding name…yet so simple! the simple combination of Milk, eggs, coconut and a couple other minor ingredients are put into the blender, that my youngest wasn’t aware we had, mixed well and poured into a prepared pie plate. It then goes into the oven and within 45 minutes you have an awesome coconut custard pie.
2 cups milk
1 cup flaked coconut
1 teaspoon vanilla extract
1/2 cup all-purpose flour
6 tablespoons margarine
3/4 cup white sugar
1/4 teaspoon ground nutmeg
|1.||Place milk, coconut, eggs, vanilla, flour, margarine, and sugar in blender. Mix well. Pour into a greased and floured 10 inch pie plate. Sprinkle nutmeg on top.|
|2.||Bake at 350 degrees F (175 degrees C) for 45 minutes.|

So after seriously five minutes work, 45 minute wait…things don’t seem so impossible after all. Today is a new day, tomorrow will be yet another…and somedays all your troubles can simply disappear with an Impossible Pie!
